Grilled Vegetable Sandwich Recipe With Garlic Mayonnaise

Ingredients (for 2 sandwiches):

  9. -For the mayonnaise of black garlic 2-3 tablespoons of mayonnaise
  10. 4 cloves of black garlic

Laminate the onion. Wash, dry and roll the zucchini. Peel the carrot and cut into slices. Wash, dry and cut the pepper into strips. Spread a tray with olive oil and place the vegetables without overlapping them.

Add a little aromatic herb, garlic powder, and salt. Sprinkle with a fine string of olive oil. Bake at 180 degrees for 20 minutes. Before removing them, check they are tender.

How to roast vegetables in the oven

While the vegetables are roasting, prepare the black garlic mayonnaise. To avoid cutting, place the egg at room temperature, salt, vinegar and sunflower oil in the blender jar.

Put the arm of the blender without igniting and, when it is at the bottom and without moving it, activate and wait for the mixture to emulsify. Go up little by little and, when you get up, you’ll have the mayonnaise ready.

We will only need 2-3 tablespoons of mayonnaise, remove the rest and use for other preparations. Then add the peeled black garlic cloves and crush until integrated. Once done, remove the vegetables, toast the bread and grate the cheese.

To assemble the sandwich, cover the bottom lid with black garlic mayonnaise, place the roasted vegetables on top: zucchini, carrot, onion, and pepper. Add a little more mayonnaise, grated cheese, and cap. Put in the oven 3-4 minutes and serve immediately.
